Jumbo Prawns from Fridge to Grill: Thawing, BBQ Safety and Leftovers
Jumbo prawns usually end up cooked outdoors, for a crowd, in warm weather or after a long afternoon of preparation – exactly the conditions where food safety slips. Their thickness also changes the rules for thawing and checking doneness. This guide covers how to handle Jumbo Prawns from the moment they reach your kitchen to the last skewer off the grill.
What Makes a Prawn "Jumbo"?
"Jumbo" is a size grade, not a species. It describes the largest prawns sorted from a catch of penaeid prawns – the marine prawn family that dominates the Arabian Sea trade. You may also see the term "king prawns" used loosely for very large prawns; it is a trade description, not a specific animal. Which species appears in a given batch can vary with stock, so check the product page or ask FishMart if you need details.
Jumbo prawns differ from Tiger Prawns, which are a recognisable striped type and are sold under their own name. And while very large prawns are sometimes compared to lobster for their dense bite, they are a different animal – prawns are much lighter in shell and far quicker to cook.
Storage When They Arrive
Cooking within 1–2 days
- Refrigerate immediately at 0–4 °C, in the coldest part of the fridge.
- Store in a covered container set over ice, on the lowest shelf, away from cooked food.
- Whole prawns deteriorate first at the head. If you won't cook them on the first day, consider removing the heads and storing them separately – or freezing them for stock.
Cooking later
- Freeze at -18 °C on the day you receive them, rather than after a couple of days in the fridge.
- Shell-on prawns hold their texture best in the freezer.
- Pack in a single layer in flat bags, press out the air and label with the date.
- For the best eating quality, use within a few months.
Thawing Thick Prawns Properly
A jumbo prawn has a thick core that stays frozen long after the surface feels soft. Grilling a prawn with a frozen centre means charred shells and a raw middle.
- Plan a full night. Move the bags to the fridge the evening before your BBQ.
- Catch the drips. Put the bags in a bowl or tray so the thawing liquid doesn't touch other food.
- Check the centre. Bend a prawn gently – it should be flexible right through, with no icy core.
- Short of time? Keep the prawns sealed and submerge the bag in cold water, changing it every 30 minutes, then cook straight away.
- Never thaw on the counter or in the sun, and don't refreeze prawns once they have been thawed raw.
Marinating for the Grill
- Always marinate in the fridge, covered.
- Dry rubs and oil-based marinades can go on a few hours ahead.
- Yoghurt, lemon and vinegar marinades should be short – around 20–30 minutes – or the outside of the prawns turns soft.
- Set aside a portion of marinade before it touches raw prawns if you want some for basting or serving.
Keeping the Cold Chain at an Outdoor BBQ
Rooftops, gardens and farmhouses can be warm even in the evening, and cooking for a group means food sits around while the grill gets going.
- Use a cooler box with ice for raw prawns, and take out only one grill-load at a time.
- Keep the cooler in the shade and away from the heat of the coals.
- Separate raw and cooked: different trays, different tongs, different brushes. Never put cooked prawns back on the tray that held them raw.
- Wash hands after handling raw prawns, especially before touching bread, salad or plates.
- Serve promptly. Don't let cooked prawns sit out in the heat; on a hot day, aim to clear them within an hour or so, and within about two hours at most.
How to Tell Jumbo Prawns Are Cooked
Thickness makes judging doneness by eye a little harder than with smaller prawns.
- Colour: shells turn bright orange-pink; peeled flesh turns from grey-translucent to pink and white.
- Centre: cut into the thickest prawn on the grill. It should be opaque white all the way through, with no glassy grey middle.
- Shape: a gentle "C" curl. A tight "O" usually means overcooked.
- Heads: on whole prawns, the head should be cooked through too; the juices inside should no longer look raw.
If the outside is charring before the centre is done, move the prawns to a cooler part of the grill and give them a little longer.
Leftovers
- Refrigerate leftover grilled prawns within two hours of cooking (sooner on a hot day), in a shallow covered container.
- Eat within 1–2 days.
- Peel and chop leftovers into a prawn salad, a quick fried rice or a wrap with chutney, or reheat gently in a pan until hot throughout.
- Reheat only once, and don't freeze leftovers that have already been sitting out.
Nutrition in Plain Terms
Like other prawns, jumbo prawns are a good source of protein and naturally low in fat. Grilling and roasting are lighter ways to cook them than deep-frying; the butter and oil in bastes and marinades add up, so use them with a light hand if that matters to you. Shellfish allergy can be serious – check with guests before a seafood BBQ and keep prawns away from other food on the grill if anyone is allergic. For any specific dietary concerns, follow your doctor's advice.
Ready for the BBQ
Plan your thawing, keep raw prawns on ice and check the thickest one before serving, and jumbo prawns will be the safest and most impressive thing on the grill. Try our tandoori and BBQ jumbo prawn recipes, order from the Jumbo Prawns page, or browse the full Prawns & Shrimp range.
Frequently asked questions
How long do jumbo prawns take to thaw?
Allow a full night in the fridge. Thick prawns can stay frozen at the centre even when the outside feels soft, so check they bend easily before cooking.
Are 'king prawns' and 'jumbo prawns' the same thing?
Both are loose trade terms for very large prawns rather than names of a single species. What matters for cooking is the size and cut.
Can I grill prawns that were thawed and then left out at a BBQ?
Raw prawns should be kept on ice until grilling. If they have sat out warm for a long time, it is safer to throw them away.
Are the heads of grilled jumbo prawns safe to eat?
Many people enjoy the juices in the head. Make sure the head is fully cooked, and skip it if the prawns were not very fresh.
